Crab Cakes?
1 - Crab Meat
2 - Egg white
3 - Chopped Shallots
4 - Maybe a little celery, very finely chopped
5 - Bread crumbs, maybe seasoned with some of #6 and/or #7
6 - Your brand of creole seasoning
7 - Maybe black pepper, maybe red pepper, maybe salt, depending on the brand of creole seasoning you like.
Make patty 3/4 inch thick, sauté in butter in skillet. Eat with favorite sauce and cold beer.
1 pound should make 3 or 4, depending on diameter.

You should do the low-brow crab meat pizza. So damn good.
I think you just smear cream cheese on a pizza pan, top it with some home made cocktail sauce (I like it very horseradishy), then just spread your crab meat on top evenly. Eat with Ritz.
Some lemon juice maybe...fresh chopped parsley if you're in the mood.

Drown in butter and place over a bacon wrapped fillet mid rare with some scratch mash potatoes made with heavy whipping cream, butter, white pepper, salt, garlic and some steamed broccoli.

I agree that the West Indies salad is delicious. I love a crab Louis salad, as well.
You could make crabmeat and spinach timbales with a buerre blanc sauce. Delicious.
Look at my post here with the link. It MUST have the buerre blanc sauce.

Stuffed eggplant is a good idea also. I only use jumbo lump and shrimp for that. I think my recipe is in the recipe book or it's somewhere around here because I think I gave it to Mr. Balls.
