What's your favorite cuisine to eat but wish were better at cooking?

Me, too. I suspect it's the most common answer.

For one thing, it's not as easy to get all of the ingredients. Another thing is you need a gazillion BTU burner with a lot of heavy pots.

I believe the lack of common knowledge and rollover ingredients is the main hindrance.

I'll throw Indian/middle eastern on the list.

seriously! especially cajun food. outside of jambalaya which I'm not a huge fan of, I love it all / gumbo, sauce piquantes, crawfish pies, boiled seafood, boiled crawfish, etc. Just don't have any knowledge or experience cooking it.

Not that hard, really. In spite of what some others may say, there are some really good cookbooks that helped me out.

Get the Rima and Richard Collin book. Seriously. Has some great classic recipes.

Ribs. I love damn good ribs. I make ok ribs, but not damn good ribs.

For me it's Chili. My future mother in law makes the best chili i have ever eaten. I think she left out a few key ingredients when she gave me her recipe, just doesn't come out right.

Indian. Can't ever get the "depth" or the background flavors right. Usually turns out OK but just always seems lacking.

I love Indian but never tried to cook it. I really need to find a good cookbook for it and try some stuff.
