Give me a rundown on rabbit as a dish and where to find it served

Have been seeing it mentioned a bit on the board - never had it before. I know Cochon and Mr. B's are two places I've seen it mentioned a lot.

What should I expect?

The question of what to expect is a bit nebulous as it is a case of one chef vs another in preparation. It is a a dish very easily made at home, so you control the flavors involved.

La Provence has a rabbit dish that is pretty damn good

I keep hearing that New Orleans Food and Spirits has a good rabbit dish on Thursday's, but I haven't made over to try it yet.

I've had it and thoroughly enjoyed it at Le Creole in BR.

Very very tasty with a chicken texture.

Taste like squirrel but a little more mild, not as gamey.

Cafe 615 over in Gretna formerly know as Da Wabbitt. Their Thursday lunch special is white beans and rice with smothered rabbit.

The one time I had it, it was at August and wrapped in bacon. Pretty gross, actually.

Brigtsen's rabbit is excellent. Best I've had.
