I had this last week and it is very good. It comes fried with grit cake, spinach and creole mustard sauce. Leftover sauce is great with bread.

As notiger1997 mentioned, the Thursday lunch special at New Orleans Food & Spirits is great. Rabbit and white beans. They run out quick.

Do any of you brine rabbit or squirrel? I'm thinking of trying it this hunting season. Seems like it would mellow it out some.

yup. smothered rabbit at the one in bucktown. haven't been there for years, but if it was good as i remember, worth checking out.

rabbit is some good shite, just watch out for the bones! Only rabbit i've had was at K-Pauls and it was outstanding (fried tenderloin). We usually make a few rabbit hunts a year and make rabbit sauce piquant and rabbit spaghetti. Wild rabbit has a different flavor than farm raised rabbit for sure.

T-Coon's in Laffy has smothered rabbit one or two days a week. Can't remember the days though.

Oh dear lord what rabbit are you shooting that tastes like squirrel? An old worn out meth rabbit?

For the record I eat both. Brigtsens and LaPetite Grocery are phenomenal but it's also very good at my house as a sauce piquante. Only during cold weather months because they have worms during the hot months. I used to have a domestic rabbit supplier but she died. If anyone knows one I'm all ears.

I had the rabbit stew over rice at Sammy's this past Sat, and it was pretty dern good. I'd been drinking for hours at that point, but I felt my faculties for taste were still sound.

Latil's at Houmas House has killer rabbit and andouille gumbo.
