I like it...esp with C%S Gumbo

speaking of, how about a good potato salad recipe...

i put a pealed baked sweet potato in mine. i don't like how the potato salad melts in the gumbo.

Potato salad in gumbo is a Lafayette thing...People from there are the only ones I've seen do that.

In laws are from there. Guess that's where I picked it up from. For the record, I don't season the outside of my crawfish when I boil.

I'm from the New Orleans area. We always had potato salad with gumbo.

Has anyone here ever tried gumbo over grits? I haven't but I sometimes put chili over grits and it's terrific.

If I had a shitty bowl of gumbo I might dump potato salad in it, could help. If I made a great pot of seafood gumbo and some backwoods rube put potato salad in it it would be their last bowl.

They do it in Ville Platte and Houma too.

I usually have the first bowl with rice and the second with a nice ice cream scoop of potato salad and no rice.
