csb time. Went over to bourgeois meat market on canal in thibs. They were all out of graded filet. Guy tells me he had some cuts from a local grass fed cow. Sold it to me at ribeye price. (bought 10 steaks) Best fricking filet Mignon I've ever had in my life.

Skirt steak. Not the most tender but best taste by far.

Sirloin is second, has a different taste than skirt.
