I area mine, but then I soak them. You saying you just season the water you're steaming with and no soak? If so, do you just put seasoning over the crawfish while steaming?

Yep. Pour as you fill the pot with crawfish.

Something just seems wrong about that. Is there a bunch of seasoning on the outside of the crawfish after?

Not if you do it the right amount of time. Have to do it ten minutes ONCE steam starts coming out. If you don't cook long enough you'll have what you said

The best crawfish I ever had was at the Jungle Club in Ville Platte in the 80's. No idea how they were cooked, but they always had seasoning on the outside.
I'd like to experiment with a cooker that was long and narrow like a salt water box. Water at bottom and perforated steel layer a few inches up. Crawfish never in the water. Seasoning poured in over them.

we eat boiled crawfish 2-4 times per week so we usually like to do them fast after work

After fishing 2k+ traps potentially 7 days of the week we want to JUST drink beer and not focus much on the crawfish

I would not want to see a crawfish after running 2k plus traps. I get tired of fricking with them after about 500 or so traps. If you don't mind me asking where you running all these traps?
