How old are you going to be in 2-4 years?
This would be doing yourself a great disservice. Find something more focused even if it takes longer.

Find an industry that revolves around healthcare or construction IMO.

Does LSU still count the classes after having taken them 10+ yrs ago?
Yessir. Confirmed that with them several years ago when toying with this idea. Work turned into a situation where I could not pivot away from it and give either school or my job the attention they deserved.
Things have changed and I'm blessed to be in a different place with more free time to dedicate to my future.

I'd probably go ISDS, there are computer systems in pretty much every working environment. Focus on what aspect of business you enjoy, maybe ISDS with a focus in finance or management.
That supply chain management degree from Southeastern looks interesting, too.
Definitely don't do general studies. The extra time and effort of getting a specialized degree would be worth it imo.

It was rhetorical just in case you were doubting yourself. You'll either be 37-39 years old with a degree or without. Either way, you're going to get older so motivate yourself to get it done.

ISDS with a focus in healthcare would be my recommendation, but LSU doesn't offer that. It's a great field, though.

I got a history/marketing degree. If I could go back I'd choose Construction Management. I've been in sales since graduating in 2011 and love it. Always been my passion. But CM would be pretty great.

It's a degree where you learn to behead computers in the name of Apple and IBM.

Sent an e-mail to the Department Chair at SLU about some additional information about 10 minutes ago.
Thanks for the suggestion. I mean it.

He's a rrrreallly good guy and extremely intelligent.
Tino and wishiwastebow also graduated around the same time as me so they might come chime in. It's surely not for everybody but I went into it blind and was surprised how much I enjoyed it.

My class in dental school had a few people who were over 30. Also, the dentist who was my partner in our practice got into dentistry as a career change. He had an engineering degree and worked at a plant, then decided to go to dental school in his 30s.

Been thinking about this for years myself. I got enough saved up now where I can afford not to work so now might be the time for me.

Information systems. If you tie it with healthcare you are set to work on EHR project teams for hospitals. Which is an emerging field that pays pretty well, too.

I was blessed to find myself in a situation that should allow me the flexibility to do this and I'm genuinely excited. I'm wondering if I can take any courses at the Literacy and Technology Center/SLU Extension campus in Walker? That'd be awesome.
