Well, first I'm assuming here this debt is over 7 years old?
So #1 concern is reviving a debt and restarting that clock. However, you'd be paying it off so I'm not seeing any real issues with her credit. Her being a 730 tells me this has probably already fallen off her report.
So now you're essentially paying $800 to be able to play the game. It's possible to make that up with bonuses from Chase within 3 applications.
However, I'm not sold on if they'd give her anything above a Freedom and I'm almost 100% they won't give her two cards at once. I'd guess she can get one now and a second maybe around 4-6 months from now.

Actually looking at it it didn't become delinquent until 2014. We were under the impression it was 2012 and I was inclined to just let it fall off but I guess they took a while to officially call it. I was originally just going to let it fall off and use non-Chase credit cards but I think we'll just pay it so she's not banned from Chase forever over $800.

Just as an added comment. If you pay off that $800. I'd wait a solid month or so before doing anything else. The key is to put this "in the past" a bit.

Using Korean Air's award chart to Hawaii is pretty popular. They group Hawaii with the continental US, which makes sense from the Korean perspective.
There's also (for now) using Singapore/United.
I think the Hyatt out there is also a well received property.

But if you are set on Hawaii - there are plenty of options. Best one obviously is the Korean option for flights. But first you have to pick an island.
Maui option - If you have 140K SPG, you could do 7 nights at Ritz Kapalua plus get 110K miles in an airline of your choice, (or 132K to United) through Marriott nights and flights.
The Singapore option is next best at 35K. This is the more practical option because there is tons of availability here on UA flights unlike on DL. I just use SQ myself to fly ATL-OGG last week. One stop flights from ATL (DEN/SFO).
Kauai option - Grand Hyatt Kauai is 25K Hyatt/UR a night.

I have roughly 150K Chase UR, 100K SPG, 50K Amex MR, 100K DL. I could increase most of these fairly easy as my fiance has never churned any cards and I have never personally signed up for the Amex SPG either.
What program offers the Maui option you mentioned at the Ritz?
I will probably look into flying the Skypass/Korean 45K option coupled with the 140K Ritz Kapalua, that sounds like a pretty good deal.

Here is what I would do:
Book the Delta Flights with your Skypass miles asap. Econ is hard to come by itself, biz even more so. But like I said, there is plenty of availability on UA.
Ritz Kapalua bay is a Tier 4 property so it is 60K points a night. I would send over 80K SPG over to Marriott to get 240K points and book 5 nights (you get the 5th night free). Then I would get the Ritz card that comes with 2 free nights and $350 airline credit (plus $100 off any domestic round trip ticket when you buy two) with a $450 AF. That gives you a whole week at the Ritz.
Alternatively, you could do what I did last week and stay at the most recently renovated property on Maui - the Wailea Beach Resort. Also a Marriott property but category 8, Meaning you nee only 40K points a night for a total of 240K Marriott or 80K SPG for a week. Its a really really nice property. We loved it. You will be booked in the base room but will have the opportunity to pay some cash for an upgraded room.
There is another option (this is the one that I did) called Marriott nights and flights. Here is the chart: LINK
The best deal here is to get one of the topmost package in the categoy/tier you are looking at. So Ritz would be 540K Marriott (or 180K SPG) or Wailea Beach Resort would be 360K Marriott (or 120K SPG). Gets you 1 full week at the hotel and 110K Airline miles. But you can always opt to go for a lower package on the chart.
So if you were to find DL flights in Biz, all you would need is 90K UR and 80K SPG.
All that said, having spent last 9 days on Maui, though very cool, I have to say, didn't quite strike me as a honeymoon destination. But to each his own

Is there any way to convert UR points to book a JetBlue or American Airlines flight? Seeing a few good rates for quick weekend trips and figured I'd check with the experts first.

Depends on which card you have. If you have Sapphire reserve, preferred or ink - then yes.

I've got the reserve and preferred, although ditching the preferred if they ever stop waiving my AF. Also have the freedom, so sitting on close to 300k UR points. Was hoping to take a long Hawaii vacation but life isn't cooperating so taking long weekends instead.

Thanks for the advice, I know nothing about HI or the specific islands I could certainly be persuaded to look elsewhere. I just figured it was the safest bet with nice weather in October, I think the BVI's etc could be a gamble.
Maldives have always intrigued me but it is such a PITA to get there.

I hear you on that. HI is indeed very easy with lots to do and will be a good choice, I was just letting you know what I felt.
With just a little bit of effort you could probably do something more epic, if you are so inclined. You already know how to go about HI. If there is something else you need help with, let us know and we can probably help you out with that.

Also, headed to Greece next year checked out Korean and can do the 50,000 miles RT but it's over $300 in fees per person. Is that normal, do you know a better way to go? The flight isn't going through LHR or anything so not sure why the high fees..
Looked on Alaska and cheapest was 32,500 each way and even higher fees. AA as you know sucks arse.

You can transfer SPG to SQ but no reason to, because all three (TYP, MR and UR) transfer to SQ 1:1. Also, all star alliance flights should be credited to SQ as you earn 100% flown miles as redeemable miles on SQ. Our last flight alone to SE Asia on ANA (UA codeshare) earned us enough for 1 way tix to Hawaii this year.
Korean passes carrier imposed surcharges on award tix. $300 is pretty reasonable. Thats a lot of flying for 50k + $300.

2+ weeks legitimately anywhere in the world that accepts American tourists. If you focused on places that are more exotic than classic (mainland south east Asia over Paris, for example), you could probably manage an entire month.
At the end of this month, the lady and I are taking a trip to Japan for 18 days. If my memory serves me, we booked airfare for two and nine nights at very nice Hyatt hotels for something like 325k points. And Japan is fricking expensive.

My credit card and MS game has switched over the last year. I have been buying and renovating flood homes so my cc apps have been geared more towards that. I would like to do a mini app-o-rama for purchase of supplies and pay subcontractors for the next three months.
My question is, what would you all recommend as far as cards with 0% APR for purchases and any kind of "decent" sign up bonus.
