There is zero reason to eat the casing on boudin that is not grilled. If you do eat it, you're a gross bastard/bitch. Disgusting, really.

Good boudin has a casing that is crisp and snaps when you bite into it whether it is grilled or not.

I've always thought it was generational. Older generation (mine) used or uses the bite and pull method, younger generation wolfs it down, casing and all.

I've always eaten it unless I'm using the boudin for something else like stuffing a tomato or bell pepper.

But it doesn't digest. It's like a dog eating dental floss. If you look you will see it again.

I rub the casing with oil and bake boudin. Comes out perfectly edible every time. If you can stand to let it cool you can slice it like sausage and serve it with mustard.
