I use 1/4 cup of salt per half gallon of water and soak overnight.

I hate to agree with a fricktard, but it's old beans. And if you add salt early on, then you are doubly fricked.

I believe yalls antecdotal evidence. I've done them both ways a couple times and didn't notice a difference, or care enough to notice. Sometimes I don't mind the extra time when cooking.

Tried to cook some beans at the inlaws, and they would NEVER get done. Turned out they had been in the pantry forever. The best by date was years earlier.

If I soak them overnight then I usually only cook for about 2 hours. Granted I prefer my red beans mostly intact rather than mashed up.

Gotta be the beans. Living in Tx, sometimes can't get Camilla brand and others are sometimes old . You can cook all day and night and they won't soften.

I tried boiling artichokes for a date once, and those damn things took forever to get soft enough to eat (recipe said something like 40 minutes). It was supposed to be our appetizer...so it jacked up everything I had timed out.

I cook mine on high heat for an hour and a half then another hour and a half to two hours at a simmer. Then I usually just eat them the next day.

Working from home office so made some Instant Pot red beans with better than bouillon, seasoning, ham hock and Vernon smoked sausage. Had to dump it into the pot to start up some black eyed peas.

Edit, whole process was an hour.

No it doesn’t. If you want to take the farts out, you need to be exact and count the beans.

Add precisely 239 beans to the pot, just one more bean and they are too farty!!

I quick soak for 20-30 minutes and then in the pot takes under 3 hours. With that said, the first hour and a half those suckers are rolling.
