A "perfect medium-rare" is controversial to me. Are you saying medium rare is perfect or that the cook hit the temp perfectly? I get the feeling that it's the former and medium rare is very damn far from perfect. This is perfect.

The only method I'm aware of that uses unseasoned boiling water is the "two pot" method where the seasoned pot is for soaking.

There is never a need to season the outside, the boil takes care of that.

Crawfish should not be full of seasoning when peeling .

boudin comes out of the paper bag..boudin gets eaten.

i never knew there were people who pulled the casing apart. who the hell throws away perfectly good boudin thats on the casing?

or at least I've never seen that

most people that eat the casing are talking about grilled boudin
