I eat the casing on steamed boudin. Everyone I've eaten boudin with does too.

Honestly, when I take a bite, the casing rarely comes with it. Unless I was sitting down with a serrated knife, I usually only get the filling out when I bite down on a whole link.

(ETA: Referencing the boudin I eat most often -- Billy's and/or Best Stop)

I don't find it to be particularly chewy. I don't really notice it, honestly. If it is noticeable, it's a sign of mediocre boudin, generally.

I only ever grill boudin, so this really isn't an issue

but the "raw" casing seems like it would not be a pleasant texture in my mouth

I've never heard of people not eating the casing for boudin. Do you not eat the sausage casing too?

Growing up, we'd get boudin from the store down the street and eat it straight from the store. Cold boudin is delicious.

The casing tastes like the boudin.

This thread makes me want boudin for lunch.

Put it on the barbq grill for 5 or 10 minutes - or put it in the oven on a baking sheet for 20. Turn it once or twice so it doesn't stick. The casing will break with each bite. End of controversy.

Yeah until this thread I had no idea that people didn't eat the casing. I mostly eat grilled boudin, but even when I have it steamed I don't really notice the casing... I just I eat it.
