What to do with leftover gumbo?

I just poured a ladle of leftover gumbo over a whop biscuit and put a poached egg on top.



Any other ideas?

I'd probably just reheat it, and eat it again. Better the next day anyway.

Leftover gumbo is supposed to go in the freezer. But I've seen it treated like a pot pie....a little rice mixed w/the gumbo, put into a deep casserole, topped w/pastry & baked.

Freeze in single serve containers, so good on a cold day when you get home from work & don't feel like/have time to cook.

I usually take it a step further than you did (a la French Press in Lafayette), and do what they call a Cajun Benedict. Toast some French bread, fry up a boudin ball to put on it, top it with a poached egg, and float it in the leftover gumbo. So damn good.

what I call a gumbo sandwich... let the gumbo congeal in the fridge and then put it on bread like a sandwich

I gots some Duck and Deer sausage gumbo in the fridge that I slaved over yesterday. Can't wait to get home.
