re: Sous Vide Burgers - Delacroix
I love to sous vide steak and chicken. However, burgers aren't worth the trouble of sous vide, IMO. The temperature gradient in a burger cooked in a hot cast iron or a hot grill isn't as troublesome as with steak. I've tried to sous vide burgers, but honestly it isn't any better than cooking it ...

re: "Authentic" Mexican vs "TexMex" - Delacroix
I just returned from Mexico and had the opportunity to try a few authentic restaurants. I do really enjoy authentic mexican tacos more along with the chorizo dishes. But what I prefer about Tex-Mex is the cheese and chips and salsa. ...

re: Anyone experiment with bacon in jambalaya before? - Delacroix
I love bacon in jambalaya. I usually cut up a pack into small pieces and fry it before I put the pork in. I know it's not competition gonzales-style, but it's a great addition....
My wife does fine. I use the closed captioning. Only show I've ever had to do it for. Some of the accents are too much.
Yeah I use CC too. But it's worth it. One of my favorite shows for sure. I just wish there were more than 6 episodes a season...

re: Financial advisor in Ascension - Delacroix
My 401k balance has not moved in 17 months despite my making contributions bi-weekly. My IRA is barely breaking even for the last 18 months. I know the markets have been not been perfoming so well lately but I should be making some progress over a year and a half. I have made a number of atte...

re: Sturgill or Stapleton? - Delacroix
Part of it for me is likely that I was never really a classic country fan. I don't hate it, but I generally like mid 90s country and Texas music from a pure "enjoyment" standpoint. After that, it's mostly Americana/folk for me. Hence, I can listen to Dylan and Isbell and Townes all day, b...

re: Sturgill or Stapleton? - Delacroix
Simpson took many listens for me to really love it.
Same with me. I didnt really get the love for Sturgill the first few listens but he has definitely grown on me and now I love his stuff. That being said, I prefer Steeldriver Stapleton over Sturgill. But that's mainly bc I en...

re: Where to yak fish on the north shore? - Delacroix
OP, how'd you do out of the Tchefuncte? I was out there this past weekend on a kayak. Fished a little, but I didn't get a bite. I like that location because of the restaurants on the Tchefuncte if the lake were to get too rough, but finding some fish would be a nice bonus.
I ended ...

re: "Sliders" Sports Bar & Grill coming to Prairieville - Delacroix
I went last week. Service was good and the staff was very friendly. The food was disappointing. I ordered the Cowboy Burger. The patty was good, but they went very cheap on the other ingredients on the burger. The bacon was the paper-thin microwaveable type and the bun was similar to great value bra...
