Yesterday afternoon I put some boneless skinless thighs on the Traeger to smoke for the gumbo I cooked today. This is a request for a baby shower tomorrow and they're paying. I did all of the sausage and andouille slicing yesterday as well as all of the seasoning so all I had to do today was make the roux and cook the gumbo. Oh, after smoking the thighs I put them in a big stock pot with cold water and brought that up to a light simmering boil to make a nice smoky stock.

Of course I made more than needed so we could have some for dinner.
