Best pork dish I have ever had was 3 weeks ago at Boucherie. A special that night was a pork porterhouse, brined and grilled. Just amazing. I've never seen that cut offered any other place.

Did that come with the refried beets and some kinda glaze? If so, that thing was insane...

Also, best thing for me? Probably the roasted pig face from Girl & the Goat

I make a similar dish and love it. Marinate pork tenderloin in soy sauce, garlic, ginger, olive oil and sugar. Grill to medium temp on hot grill so the sugar chars a bit.yummy

Jamon Iberico from a Michelin starred Spanish restaurant that only sourced the best of the best.

No other pork could even compare.

Right up there was an appetizer I had for brunch at Ox Lot 9. It was mini, buttery drop biscuits, with perfectly cooked crispy and gooey pork belly, topped with pickled mirliton and pepper jelly. God...it was soooo good.

I'm planned a last minute trip to Chicago for next month. I want to eat at Girl & the Goat so bad...but doesn't look like I'll be able to get in.
