Does anyone have any recs for an oyster knife? Looking for functionality over looks. Also, I don't want to spend 50 bucks on an oyster knife.

Buy two of them. Because you'll want a friend to help shuck.

In fact, I buy a lot of their knives (victorinox too) for general kitchen use. They are cheap and sharp. I never really bought into the fancy $400-$500 knife blocks when every commercial kitchen uses this kind of stuff.

Dexter Russell style is the tried and true. I'd also get a pair of gloes while you are at it. Nothing worse than jabbing your hand with the oyster knife full of juices and shell.

This is the right answer. If you're shucking oysters with a screwdriver, it's because you don't have the time or sense to get a proper knife.

Yep. I like the thinner blade.

This is all I've ever used, you can get them at hardware stores for less than that sometimes.

Yep. Sometimes the best tool for the job is the cheaper & simpler option. I personally like the New Haven style which had a slight upward curved tip which aids in prying open stubborn oysters.

Yep. The Dexter Russell with the New Haven blade works well for me.

I bought one of those Dexter Russel types years ago, on the counter at Farmers Sefoood, and it works well.

I paid about $90 at the Red River Revel for a beautiful custom made oyster knife with scabbard, but I can't bring myself to actually use it for fear of scratching it up. It sits on a display stand while the old white handle does the work.

I asked the knife guy at the Revel if he had oyster knives, and he said no, but he was thinking about it. The next year he showed up with a few, so I felt like I had to buy one, it's really nice, but maybe too nice,
