It's partially frozen cut on a commercial slicer , like you see in a deli cutting meat.

There is a catfish place in Pearl, MS close to Sam's and Bass Pro Shop called Moss Creek. They sell Simmons catfish and have thin sliced catfish on their menu. It is pretty much Middendorf's product.

Name three restaurants that serve wild caught catfish exclusively? The feed they use on farm raised catfish is light years from what it was when Purina started in the mid 70's and the fish is much cleaner and neutral.

And Middendorfs was bought out after Katrina by the couple that owned Bella Luna. I don't know who is cutting the fish now but before they bought it it was only one or two people that hand cut it one was an old black lady that had been there all my life.

Yeah, that place is really good... I refused to even give it a chance for a long time because what's the likelihood of a fish house being opened in an old Ryan's being worth a shite?

Re wild caught, all of the Spahrs locations, to start my list, use only wild caught fish only....and pretty much most places in my neck of the woods...little poboy places like Harrys, larger joints like St Rose Tavern.....There is a local fishery and ppl round here damn sure know the difference, and most show a marked preference for wild caught. One big benefit of living in the coastal zone: I don't have to eat farm raised fish. I can buy wild caught at two different seafood markets in my dinky town and direct from fishermen at my farmers market.

Believe it or not, I've never been there and really didn't like fried catfish until I had the thin stuff at NO Hamburger and Seafood.

Most restaurants in Terrebonne/Lafourche serve wild caught catfish. I can certainly tell the difference.

Does Sparh's serve wild caught?

I know their prices dramatically went up about a year ago.

I have duplicated it. You partially freeze the filets and then slice them on a deli slicer. Comes out really good.

I guess cooking the amount Middendorfs does partially freezing and deli slicing makes since but I can slice just as thin and consistent with a good, flexible, sharp filet knife. Plus it is a lot easier to clean than a deli slicer which I don't necessarily keep on the counter.

Count me in the group that isn't impressed by their thin catfish. Ate their once about 10 years ago. Got the thin catfish. Couldn't wait to try it. Took the first bite and thought, thats it? This is what everybody is raving about? Haven't been back since.

Exact same deal as Spahr's. No thanks. I buy mine from two brothers who fish around Lake Verrett. Beautiful, clean, white, small filets for 3 bucks a pound. Comes in 1 or 2lb bags - ziploc bags.
