Make-ahead meals for freezing

Moving from summer mode to school mode and want to get cranking on some cooking this weekend to freeze some stuff for during the week. My go-to's have been:
-red beans
-roast and gravy
-pastalaya
-red gravy for spaghetti
-chili and gumbo when it gets cooler

Any other suggestions? Kids get tired of the same things.

Thanks and good ideas. They equate soups with cold weather, so I get about a 3 month window. Me, I just turn down the a/c and enjoy.

in on this thread, although my wife and i try to eat very healthy so any good healthy freezable items are welcome

heavy soups, pastas, casseroles dont work in our house

Pulled pork for sandwiches freezes very well in vac seal bags. I've frozen smoked ribs the same way. You can do the same with cooked pork chops if you undercook them a bit.

Chicken spaghetti-undercook the pasta a bit.

Various types of stews, beef or chicken.

Pot pies

Baked ziti before it's baked.

Meatloaf

Meat pies

Quiche

Enchiladas

Sloppy Joe mixture

Cooked or raw burger patties

browned burger meat or diced chicken meat for tacos

Lasagna before it's baked.

Meatloaf

Red sauces

savory pies (and regular pies too)




Stuff like roast and all I would rather do the crock pot method of setting it before I leave and enjoying it when I get home.

Agree on the crockpot. Can definitely be a friend in this type situation.

Also, veggie sides are quick and easy either roasted, steamed even in the microwave or sautéed while heating the main food. That includes sweet potatoes and white potatoes which roast very well. You can even par boil those on the stove or in the oven the night before while cleaning up, stick in the fridge and cut them cold the next night for even faster roasting. You can make a flavored rice in the rice cooker if you prefer.

Breakfast for supper can be fast, fun and delicious. Frittatas don't take too long. Roast some veggies the night before to save time if you like and use them in the frittata.

Pre-cooked meatballs freeze well. You can make beef, chicken, turkey, lamb.. Anything you like. They go well with red sauces that you can also freeze.
On the same note, you can also make extra burger patties, or boneless chicken breasts when you grill on the weekend, and freeze those and serve them with fresh cooked vegetables and pasta.
Chicken and sausage gumbo and chili also freeze really well.
Macaroni and cheese.. You can assemble and freeze in one of those big aluminum trays, cook when you're ready.

My wife makes a white bean chicken chili. The kids like it more that regular chili.

Just saying anything cream or pasta based is usually out. We don't eat that stuff

Lean meats with veggies and potatoes is a typical meal

We do some lean beef or roast with carrots and potatoes. Stuff like that
