I just started a low carb diet, what are some good meals?

Not generally low carb from all the sugar in the sauce.

My wife and I try to minimize carbs and eat a meat and a veggie only during the week and we've both lost a good deal of weight. A typical week would look like this:

Baked Salmon basically S&P, garlic powder baked at 250 for about 20-25 minutes then finished with lemon juice.

Boneless skinless chicken thigh or pork chop "rice" and gravy but I use spaghetti squash in lieu of rice. you don't need to use flour to brown the meat.


Baked whole chicken but I spatchcock to reduce cook time. Just rub olive oil S&P, garlic powder on skin and bake.

Chicken thigh picatta substituting squash and zuchinni ribbons for pasta.

You can make cauliflower into "rice" as well, plenty recipes online. It makes a base for a bunch of good dishes you can vary with shrimp, chicken, pork with a base sauce of coconut milk, some chicken stock, mushrooms, ginger, garam masala, turmeric, red pepper, etc. The same can be served with spaghetti squash instead of riced cauliflower.

Nothing wrong with an occasional steak or a hamburger with an onion gravy either.

Cauliflower nachos with chicken breast/ thighs are good.

Eggplant Lasagna, easy on the marinara.

Grilled Portabella Mushrooms stuffed with a little fresh sautéed spinach, cheese, and lemon juice.

Obvious salads are obvious.

That's enough for now, the weekends are much more fun around my house but the above is hardly some huge sacrifice. good luck...

Cabbage is a very filling and good food to pair with meats. It's cheap and can go a long way.

I'm constantly rotating pork chops/loins, chicken and ground turkey taco meat (no wraps... just the meat) for my meat portion. We eat a salad every night as well, although we are doing low calorie, not low carb, so we use sesame ginger dressing. I advise oil and vinigar for you.

The key is to always brine your chicken and pork. Do a 4c water to .25c salt ratio, and you'll have great meat every time. Dress it up as you desire after that, but don't add any more salt

- Scrambled eggs, turkey bacon, sliced avocado is my go-to breakfast.

- For lunch, I usually have a chicken or shrimp and asparagus stir-fry.

- Dinner will typically be a ground turkey mixture that includes onion, jalapeno, chopped bell pepper, and a couple dashes of curry powder.

Look at Darla's WFDT posts. She has had some fantastic looking low carb meals. Stuff I had never imagined back when I used to do low carb.

Caesar Salad with lots of chicken
Chicken Wings (non breaded) with buffalo/hot sauce
Cracklin
Beef Jerky
Bacon/Eggs/Sausage obviously

Eating more carbs won't make you gain weight, eating in a calorie surplus will

Eating less carbs will not make you lose weight long term(you lose mostly water weight), being in a calorie dificit does.

Can't find that G Hughes sauce anywhere locally in NOLA area. Walmart used to carry it, but don't see it any more.

For times when you don't want to cook but do low carb here were some of my go-to fast and easy meals.

Jack in the Box - Ultimate Cheeseburger. I would get it without ketchup which has carbs and throw away the bun. Two beef patties, two types of cheese and mayo.


Wendy's classic double - throw away the bun and use the two patties as the bread with lettuce, tomato and pickles in the middle.

Walmart lemon pepper rotisserie chicken


Get tacos at Taco Bell, dump the meat and lettuce in a bowl and throw away the shells.

I think the fastest, best and easiest were the HEB frozen hamburger patties. You can always have them on hand in the freezer. They taste like they just came off the grill and take two minutes in the microwave.


Popeye's has the naked chicken strips. You can get chicken salads - hold the croutons and carrots. Chinese buffets usually have at least a few items that will be low carb - pepper steak, beef or chicken shish kabobs, salt pork, cabbage dishes, etc.

These plus other low carb meals will make it easier to stick to the diet. The most important thing is variety.

Walmart on Tchoup has it, bottom shelf. I always grab an extra though because they do run out.
