Fresh ginger and garlic go into almost every one I make. Otherwise, it's whatever is on hand.

I don't like tofu. I can tolerate it in Hot and Sour Soup, but I would not put it in any homemade dish I make. I like Healthy Boy Mushroom soy sauce,
ginger, garlic, green onions, snow peas and mushrooms, among other things.

I like mushrooms and lemongrass.
However I enjoy water chestnuts just for the crunch.
4 cups chicken stock, 2 cups rice, mushrooms, chestnuts, anything else...green onions, peppers etc...bring to boil, cover, oven 40 minutes at 350.

Julienned carrots, very thin, but I put them in close to last, I want lots of crunch.
Mushrooms, onions, red, yellow or orange peppers, snow peas or sugar snaps.
I like to marinate pork or beef or chicken in a combo of Chinese 5 spice, orange juice, soy sauce, red pepper flakes and garlic.

Kimchi, jalapeños, onions. ...shrimps....ginger. ...then dump cooked basmati in there. ...serve with a boat load of fresh basil, mint and cilantro......roast some brussell sprouts in Thai chilli and put in there too.

Have become obsessed with stir fry and make it every week
It's become like a gumbo to me, a million ways to make it and you can throw whatever you want in there
For me I've done
Shredded brocolli
Snap peas
Mushrooms
Ginger
Onion
Green beans
It's so filling and I love the shredded brocolli. It has a noodle like texture when cooked and we don't even use a starch. Very filling and healthy
Allows me to save room for my egg roll!
It's become like a gumbo to me, a million ways to make it and you can throw whatever you want in there

I like water chestnuts but the wife doesn't so I leave them out.
The meat is usually pork or shrimp.
My favorite bottled sauce is General Tsao's.

They're just opposite of all other ingredients. Onions, mushrooms, peppers, carrots all get tender during a stir fry and they suck up the saltiness. Then you have the water chestnuts. They are sweet and crunchy. Seems like they don't belong in the group. I like boil fresh water chestnuts and eat them. But I don't let them join my stir fry group.

I love making stir fries because you can experiment with so many different ingredients. I use a different mix of herbs and spices almost every time. Plus, it's so easy to pack a ton of healthy ingredients into one meal. The only part that I don't have a good handle on yet is the sauces. I don't like using most of the traditional sauces, so I'm going to have to find a good mix of healthy alternatives.
