To answer the call of your question as to whether one brand of corn flour is better than another ... YES. All corn flours are not created equal. Some are milled finer than others. I spent my late teens and early twenties battering seafood in a kitchen having my hands in corn flour for 10 hours a day making 500+ orders of fried seafood on a Friday night ... I developed the ability to feel the difference. Indian Girl was always the best. Over the counter at your supermarket, Zatarain's plain unseasoned if you just want plain corn flour. It's finer than the others ... less grit. I'm loyal to Louisiana Fish Fry in my kitchen, though. I like the flavor.

Jif PB is the best if Palm oil and sugar is your thing. Any PB that the ingredient list is peanuts and only peanuts is 10x better than JIF or that peter pan and skippy for those fan boys. Try Richards, trade joes, whole food store brand.
