Do You Use White Pepper?

I love white pepper and I use it frequently. I love the flavor. I like black pepper for certain things, but I love white pepper and I love the mix of those two together in some cases. I don't know that I used it before I got Paul Prudhomme's first cookbook. He mixed black, white and red together in many of the spice mix recipes.

We had a thread on KFC fried chicken spices recently. Apparently, white pepper is used in the largest quantity in that chicken. I haven't had that chicken in years and years and I don't really recall it tasting spicy at all, but I love white pepper and I can't recall detecting much of it.

I started using white pepper more about 2 years ago. I use now more than black pepper when cooking but I still like fresh ground pepper on finished food.

KFC original recipe has a lot of pepper in the seasoning, so I'd have to agree with you because it's not black pepper, which would be more apparent, unless it was refined to a more powdery consistency.

I have a white pepper grinder and a black pepper grinder. Well, I have one for the mixed pepper corns, too, but I don't use it as much. I also keep the big Sam's size containers of black and white pepper. I go through it because I love pepper, but I find I use more white than black, over all.

White pepper definitely brings on more heat than black pepper.

Then, you can be trashy like me! Do you shop at Sam's? I don't get my white pepper there. The large sizes can be purchased at a regular grocery store or online, for your information.

Forgive me for being pepperist, but I prefer white pepper over black and sometimes red. But I usually forget I have it and end up just using lots of black pepper instead.

I use white pepper as a main spice when making fresh sausage when I go back home and we butcher.

Is there a consensus on what dishes/stages of cooking/etc white or black pepper is better for?
I agree black on finished dishes at serving (lazy black pepper) but what else?
