Crawfish boil. Oranges or sugar?

Been thinking about oranges in the boil.

I like the slight sweetness it gives. I don't think the oranges actually give any orange flavor and I wouldnt want an orange flavor anyway.

Why not just use sugar? Anyone tried or heard of this.

It would be a challenge to get the proportions right. Would take some trial and error

Thoughts?

I use oranges and lemons and I definately taste the oranges when I suck the claws. I dont taste it in the tail meat though.

1 cup of white or brown sugar added to your regular boil spices. Learned this as a "secret" from an old man 20 years ago. I do this every now and then and my take is that it tones down the cayenne in the boil.

Dumb question. If you are trying to tone down The cayenne, why add so much to begin with?

I have a blood and a Hamlin orange tree in the yard. When I do crawfish early in the season I toss in a bunch of either or both if I still have some on the tree. I can taste a difference so if you have 'em use. I think it more the oil from the peels than the juice though.
Never heard of adding sugar!

The Asians put sugar in their boils ... it's their "secret ingredient" ... and they sell crawfish like they re-invented crack.

...I think their secret ingredient is Monosodium glutamate(MSG).

I wasn't trying to tone down the cayenne. My take on the sugar being added, to me, seems to take the hot edge off the cayenne, but leave the taste of the cayenne. Similar to what you may experience in a sweet and spicy dish or chili.

They put MSG as well I'm sure, but it's been confirmed that they use sugar.
