I wonder if we are about to see a concept change at CCBBQ, like dropping the BBQ part of it.

He may have said too much about the break up on here. I have no idea. That's a guess. Otherwise, I guess he broke up with TD.

the vast majority of volume BBQ places, if they want to actually sell food all day/all night, use commercial gas-assist wood smokers, like this one:



it burns wood, obviously, but the combustion is regulated with a gas or propane burner. its the only way to ensure a large volume of smoked meats for an all-day 100- 200 seat restaurant. you can't do competition BBQ with it, but its SOP for restaurant use

if an owner/chef wants to be aaron franklin, god bless em, but until they build up a cult following, its nearly impossible to make good money and/or keep customers happy.

I passed by Hog last night. That is a really good festival space. Right by the lake, higher (should be drier) ground, plenty of nearby parking and just a quick shot down Franklin.

Smart move to go there. They should use that space for more fests. Isn't that the area the pope used for his mass?

Bechtold was running a restaurant in Maggie Valley, NC, call Kin. Yelp, for what it's worth, reports that the restaurant is now closed
