I'm making a big etouffee. What are the best brands for packaged tail meat?

Stay away from the Chinese stuff. Also, just because they are a LA based company doesn't mean they are LA crawfish.

Boil some up. If your making a large batch why not just start with live?

I usually don't have much choice, Rouses carries 1) its own labeled La. caught ones and 2) a Chinese option. The La. tails sometimes go on sale around $10/package and that's when we stock up.

As long as you're buying La. crawfish I don't think the brand really matters.

I can't recall getting a bag of bad tails which are Louisiana crawfish. I don't buy Chinese and I'm careful to read the bags, closely. I also pay close attention to how well the bags are vac sealed. Sometimes, when buy frozen tails, I've seen air pockets and some freezer burn, probably from the bag getting nicked during loading and unloading for delivery.

I can't recall all the brands I've used, but Fleur de Lis, Pat's of Henderson and Chez Francois have all been good brands I see fairly often in various stores. I believe I've used Riceland before, as well, though not as often as the other 3. There's one more I see often, but I can't recall the name.

I've been seeing Bieber Farms tails at the stores lately. Louisiana product and usually $12-13/lb.

Some packaging I've seen has sort of orange/yellow packaging. It's usually on the front and it sometimes doesn't go all the way to the ends of the package, so there should be a part that's clear plastic to look at.

I tested my luck with Chinese tail meat (Thibodeaux's) and the second time (Boudreaux's), it ruined an etouffee. I've been getting Bonanza tail meat (LA product) from Leblanc's and it's been great.

Tonys doesn't process the tailmeat themselves. They have several processors pack it for them.

How do the cook the crawfish that get processed for tail meat? I'm sure they boil the crawfish but do they season similar to a regular boil or just do it in plain water?
