I wonder how long they boil, soak, and all that jazz to get the texture and peelability they want....

Don't know but most of the time, they seem a little parboiled or just under firm.

The best Crawfish Tails I have found. Not sure what brand they are, but I have ordered them for the last few years from CG.

Seafood International in Henderson La. puts out the Fleur Du Lis brand and it is the absolute best!
