The pimento cheese from Words and Food in Houston is the bomb.

ETA - Call me old fashioned Salmon, but I eat out for pretty much every meal.

I don't make it unless I'm going to be using a large amount at once or over time. I buy the small containers of Palmetto with jalapenos. I like it.

I also like Whole Foods pimento cheeses.

sharp cheddar
chopped pimentos
tangy mayo
pepper
pinch of sugar

that is the basic recipe that my grandma and mom taught me growing up

I like to add a few things to it these days like jalapenos, celery salt, maybe some cut up bacon, red peppers, or cream cheese

Anything but the brand in the clear plastic tub that most grocery stores sell.

If you're in Houston avail yourself to Central Market's serve yourself dip bar and buy about 3 pounds of their pimento cheese. Best in town.

Same here. Last time I made it I made a huge batch. Ended up not eating it all and had to toss some.

I love homemade pimento cheese. Mine is similar to Salmon. I sometimes rice a tiny bit of a yellow onion in there with a fine cheese grater.
