Anyone process your own meat regularly?

Pork, Deer, Beef, Boudin...
It's pretty addicting. I'm thinking about picking a night every month or so, and inviting a bunch of buddies / random people who share the same interest, and making /smoking a bunch of different sausages, etc.
Would anyone be interested in attending?
Bring your own stuff and use my equipment or I could order stuff at wholesale and have it waiting with your name on it.
To me it's one of those things where the more you are around experienced people, the more you learn.

I process my own deer and usually do the same when it comes time to do it. Invite a few friends, make sure there's plenty of beer, think up some creative recipes, and enjoy

Nope. got a few commercial kitchens and lots of space to work with thought.
We've got grinders, hydraulic stuffers, vacuum chamber sealers, and scales with handling instruction labels
I think it would be fun as hell to throw back some beers and make some unique sausages. I want to stuff a chicken one with blue cheese and buffalo sauce.

would be down. i've only done sausage once before and that was just to do it. I'd really like to get better at it.

I started learning 6 years ago, but only really got serious when our prices increased from our supplier. The more you practice, the better you get. Also, the more people you meet and ask questions, the more experience they can share and really take you to the next level.
