Took Buddy out behind the house this morning to blast a few doves. Buddy's in his 2nd year and turning into a solid little retriever. I'm still a half arse shot. Got 6. Should have got 10. Regardless, it was a beautiful morning.
I got hungry so I decided to whip up another dove breakfast. Pretty much did the same thing as last time but used canola oil to fry the doves instead of bacon grease and cooked down some potatoes with onions, garlic and rosemary.
Fillet meat off the bone. Doves are big and fat this time of year.
Give em a couple whacks with a meat hammer. Use Saran Wrap to stave off divorce.
Dredge in seasoned flour
Fry em up. About 3 minutes per side
Cooked down potatoes
Fry a couple eggs
Pour off some grease then add some of your left over flour and make a little roux. Then whisk in some milk until the lumps are gone

It's kind of like picking on Forrest Gump.
I have a dozen teal poppers that will be on the green egg shortly and 20 lbs of 15-20 shrimp about ready to boil.
Balls a milk gravy like that is my favorite. Good stuff.
