Hit and miss. You really got to go somewhere where they know how to prepare it.

Gar balls are pretty good; similar to crab cakes.

Choupic is a delicacy 'round my neck of the woods. My mom's choupic patties could bring peace to the middle east.

Gar - sure but doesn't happen often.

I'll stay away from the oh-possums.

I think gar pretty much sucks. I can eat it, but would never do it if there were other options

Used to catch alot of choupique in sweetlake on spinner baits bass fishing. Would whack em on the head wt a seat pedestal and put em in a crab trap. They were excellent for that.

I saw the same thing...never have to worry about me eating a possum, and that is saying a lot.

I'd never had gar until I went to the garfish rodeo. I ate the gar balls and fried gar and they were both delicious.

I had a gar fish roast in brown gravy a guy in Kaplan made a couple years ago. It was delicious as well.

Yes, can be good if caught in the right place.
Yes, gar balls and they were excellent.
Yes, but honestly don't remember I was so young.

And for the bonus,

Armadillo. And it was pretty good.

Being from Avoyelles Parish, we ate gar, choupique And Gou.
We didn't eat no damn possum though; too nasty. My mom used to make gar balls in gravy. Gou is also great in a white gravy over rice or fried. Choupique only remember fried. Kinda mushy. Not a favorite.

caught a big gar in the trawl once. Dad filleted it and told my mom it was Lemonfish. Tasted like sheet and tough as your belt.

The first two are delicious. An opposum I will never eat. Once saw one walk out of a dead cows arse and will never forget it.

Yes to all. Choupique patties and gar balls as others have said. Had and ol boy at work make opposum jerky one time. Not as bad as you think.

Tip on the choupique...keep it in the live well or ice chest with water ALIVE. Go home and get everything to fry ready. Take choupique out, hit it in the head and filet and fry immediately. You'll wonder why you never knew this before....and will actually be happy when one of those bastards hits your spinnerbait.
