Decided to do some pizzas in the wood fired oven last night...

The wife made the pizzas while I tended to the oven (drank beer and watched the fire). The top of the pizzas cooked a little fast for my liking because the oven was just too hot. I should have let it cooled off a little before I started the pizzas but the kids were hungry. Overall, they came out nice with a crispy crunch to the crust.

I should have taken more pictures. The pizzas the kids made were pretty funny looking...but hey, they had a good time and they ate them so all is well.

man, I want an oven like that. So many FDB posters have awesome outdoor set-ups and I have a ten year old cheap-o grill.

Anyone else see the trailer mounted brick oven out at the tailgate? It was one of the cooler things I have seen out at one of the games. The guy was turning out calzones and pizzas for the crowd.

Where was he doing this? The reason I ask is because I thought about doing something like this, but you would need a pretty big rig to turn out enough for a crowd. They make smaller, more portable ones, but they wouldn't hold their heat long enough and they don't have enough floor surface to turn out multiple pizzas at a time. To get one large enough, you would need a trailer...and I wasn't sure that LSU would allow you to pull a trailer like this out there?

Did you design this yourself? My old man had his contractor build an entire outdoor kitchen set up but wants a brick pizza oven. He's tried some smaller portable deals but nothing will match the real thing. Looks like a great set up and wondering what all it involved.

Yes, I did. I couldn't tell you how many different designs I did on Google Sketchup before I settled on this one. Hindsight being 20/20, I would have done some things differently but overall I'm happy with it. The pizza oven is neat. I should have checked the temperature in there this morning as I know it was still warm from all of the residual heat.

He was on Dalrymple across the street from the Pentagon dorms. His was on a trailer.

Sweet set up! I would love a pizza oven in my yard.

I wonder if the bricks were hot enough when you tossed in the pie. Looks great though. Congrats!

Yeah, I probably could have let them sit under the fire longer than they did, but the kids were hungry and I knew it was hot enough to do 3 pizzas.

Poor planning on my part. I could have had another beer or two if I would have started it earlier.

Yes. This was an entire trailer dedicated to the pizza oven. I know LSU will let you drag anything you want out there just as long as you pay the fee. I think the trailer fee is up to $100 now (correct me if I am wrong here) and I know the vehicle pulling it costs $40. You have to pay both fees.

It's a great idea for tailgating, but you need a few guys doing it to keep up with the crowd. Once you put a pizza in the oven, you can't get too distracted doing other things because they cook so fast. You have to keep turning them. So, you need at least one guy making the pizzas (maybe 2 depending on several factors) and one guy cooking them.
