That setup is good for jambalaya.... You will need a 100 qt aluminum pot with basket for crawfish.... And a higher pressure regulator on the burner.

If you buy individually, get a high oressure regulator so you can do all of the above: crank high for crawfish boils, turn low for fryin and jambalaya.

Thanks again for your help. Is there one burner that works best for both jambalaya and crawfish? Looks like you will need a high pressure regulator for crawfish.

What hardware stores do you recommend? I travel for work from New Orleans to Houston so I am open to stop anywhwere along the way.

maybe i'm missing something, but this seems a little small no?


i have a 100 qt and i think its ideal for a whole sack with fixins


an 80 qt is serviceable but it will be pretty full, even with just crawfish if the sack is a good size

This. I have 100 qt and it is perfect for a sack and all the sides. 80 is serviceable, but can get tight.

a 100qt pot seems to be about double the price of an 80

The first time you use your jet burner, the paint will melt off. Make sure to set up in a place where this is not an issue.

Doest really matter what hardware store you stop.... Most will have them in south louisiana. Goodwood Hardware in Baton Rouge is usually higher $ - but the staff knows their stuff and their selection is pretty solid. I bought all of my parts indivdually (hose, regulator, burner, etc) and put it together. I have a jet burner with a high oressure regulator and a smaller circle multi-port burner with the 10psi regulator for fish frys and jambalaya. The high oressure can be turned down to suit both tho

I got the 10 gal complete rig from Randy Oubre at R&R Welding. Amazing quality. The stand is perfect. It does a great job of blocking the wind, the burner is a banjo style, and the casters on the bottom are so smooth, I can roll a full pot across my lawn through the grass easily.

I'd suggest getting an enameled dutch oven for the jambalaya and just cooking it in your oven. Like a #10 size should be fine.

I have one cooker with two pots. I use the big one for turkeys and a smaller one for fish, shrimp. I've only done crawfish once. It was a lot of work, they came out a little mushy, and it is easier and costs about the same just to buy them cooked.

I'm cooking Jambalaya for 150 on Friday and then Jambalaya for 100 and Pastalaya for 100 on Saturday...not for the LSU game though.

I checked out Vernons seems like a good place. I believe they had just one American made pot seemed nice. Who makes these American made pots? Is there a big difference between the Chinese pots?

Any luck with Krazy Kajun cookware?

Goodwood in BR, Lamendolas grocery in Gonzales is also another good source.
