My sister-in-law is over run with mint. She planted it by their pool and has gone crazy. Anyone have any dishes or drinks or marinades that use this herb?

Thanks.

I use it mostly with a pea puree. Frozen peas and garlic in boiling water, strain, add chopped mint, salt, pepper and a touch of the liquid for desired consistency, hitting it with an immersion blender.

It's killer with a good pork chop.

I recommend planting mint in containers. Much easier than trying to keep it under control in your garden.

Seconded. Mint should never be allowed to roam.

Use with lamb, pork, in sauces like bolegnese, a blurred blanc with lemon and mint. Use in a sorbet, ice cream, in simple syrups, in teas, cocktails, etc. There are a ton of different uses for mint to compliment and introduce flavors.

Check out some Justin Wilson recipes. He used to put mint into all kinds of dishes. For example, Red Beans and Rice and Chicken a la Creole.

Or, you could make Mint Jelly. (also a JW recipe).

I like it minced and rubbed with sugar to make pound cake or cookies. It plays well with almonds in desserts.

Really good in fruit salad. Great with citrus fruit and a shot of limencello.

When I'm boiling water for tea I throw in a couple stems(with leaves).

Agree with the early posters saying it should t be allowed to roam. I have an old half of a whiskey barrel that is chock full of apple mint.
