Corn Pudding


Sparked by the Voodoo BBQ thread, who has a recipe for their corn pudding or something like it? That stuff is awesome.

Make these instead. They're essentially the same thing but much much better.


Zea Rotisserie: Grilled Corn Grits
Zea Rotisserie And Brewery


Ingredients:

2 cups chicken broth
2 cups heavy cream
1 cup grilled corn
1 cup yellow grits (not instant)


Directions:

To grill corn, shuck off husk. Lightly butter corncob and grill over charcoal or open fire until slightly blackened. Cool corn and cut kernels from cob with a sharp knife. Bring chicken broth to a boil. Add heavy cream and return to a boil. Slowly whisk in the grits and then the corn. Reduce heat to a simmer and cook 5 to 6 minutes. Add salt and pepper to taste.

For my recipe, I make the same recipe as Zea, but I add in a 1/2 envelope of the powdered cheese from a box of Kraft Mac & Cheese. It's sooo good and everyone that eats them thinks they're better than Zea.

Voodoo has a sweet taste to it that I have decided is from jiffy corn mix....I just have not worked out the recipe...but I'm getting close.

I have a corn pudding recipe and yes it has Jiffy corn bread mix and sour cream.

It is delicious and to me, tastes just like the dish Voodoo BBQ sells.

If anyone wants it, let me know and I will post it.

This is a very simple corn souffle, but quite good, especially in summer when the corn is fresh. It contains no Jiffy, though.

Corn Souffle

INGREDIENTS:
2 cups fresh corn kernels
2 eggs
2 tablespoons melted butter
2 cups milk, scalded
4 tablespoons finely chopped onion, optional
4 tablespoons finely chopped green or red bell pepper, optional
1 teaspoon salt
1/8 teaspoon pepper
PREPARATION:
Beat eggs; whisk in milk and melted butter. Add corn, green bell pepper, onion, and seasonings. Pour into a greased 1 1/2 quart baking dish. Set dish in a pan of hot water and bake for about 1 hour, until corn pudding is set. A knife should come out clean when inserted in center. Corn pudding recipe serves 6.

So far I've seen you say you make char-grilled oysters better than Drago's and now corn grits better than Zea's. Either you're one helluva a cook or you have an incredible taste for your own food. You've picked two things from two very well known restaurants that they just so happen to sort of specialize in.

Here's the one I use:

1 can whole kernel corn, drained
1 can cream corn
1 stick butter
1 (8 oz.) pkg. sour cream
1 box Jiffy corn bread mix

Melt butter in dish. Put in corn and cream. Mix together well. Sprinkle corn bread mix over corn and stir all together. Bake 45 minutes at 350 degrees.

This is the recipe I use except mine calls for 2 eggs.

This recipe makes enough for a 9 X 13 pan.

MightyYat you have a very good memory to remember my post. LOL And yes, I'm a damn good cook and not ashamed to say so. LOL PS And I never say what my opinion is on it...just the feedback I get from others.

I can't take credit for the recipe. I cut it out of The Advocate many years ago.

It is easy and good.
