Just so you know: Las Catalinas is kind of the end of the road in that area (literally). It's absolutely beautiful, though, and the facilities are very nice. They have kick arse mountain bike trails and a great full service bike shop (Pura Vida) that will rent you bikes (they're expensive, though). The last bit of the video, you can see us emerge out of the jungle from the mountains and onto the beach.
Are you going to have a car while you're there? If so, there are lots of little places to eat, some are just soda tipicas and some full on restaurants, all along the road between there and Playa Brasilito. Don't expect much from the food, though. Costa rican is pretty bland for the most part, but there are some surprisingly good Italian joints. Casa Celeste in Playa Potrero is good. The catamaran sail, snorkel, sunset cruise out of Playa Flamingo is pretty fun as well.

Yes i am renting a car from Liberia airport. Will have it all week. Going to do white water rafting for sure as well.

We actually didn't stay at Las Cat, but it's definitely our kind of place. Has a very 30A/Seaside vibe for Costa Rica. Much nicer than anywhere else in that area of Guanacaste. We had a large house up in the hill and drove down to Las Cat to go to the beach and mountain bike. They have a lot of active/healthy lifestyle activities there like paddle boarding as well.
We did a whole day tour up in the Rainforest with ziplines, horseback riding, tubing (instead of real whitewater rafting), and hot springs. It was a lot of fun. We actually had a van rental with a driver for that, as it was us and another family and transportation was included in the package. Las Catalinas can probably handle all those arrangements for you and advise you on how best to do all of that. The place we went is only 90 minutes or so north of Liberia. Because we have smaller kids, I think we went to one of the "tamer" rainforest tour locations.
