Suggestions for July trip with the kids (1yo to 10yo, all boys)

Looking for a non-tourist trappy trip with my kids and nephews for some time in July. Somewhere that we can do outdoor stuff like hike, play in streams, check out some caves, etc. But somewhere with some shade since it will be the dead of summer. The nephews are going to Piegon Forge in June so would prefer somewhere different. Maybe texas hill country, maybe north GA, maybe somewhere in Arkansas. Looking for somewhere less than 10h from southeast Louisiana.

I would suggest a houseboat in Arkansas, but a little sketchy with a one year old. Regardless, you want to be on or near water at that time of year here.
