I’m a Trump supporter. I’m also a chef with a lot of experience with 1000+ guest high-end catering. That plate would not have left my kitchen. I hate dual entrees to begin with. Course it out, especially at something like this. This looks institutional. At 300 guests, I can have 3 or 4 lines pumping out modern presentations and never touching a hot box or plate tree with ample service staff. For those defending the ice cream scoop, if antiquated country club vibes are what you’re going for, fine. Go center of the plate, build some height, and hide it.

ETA-I didn’t even touch on how they fricked the proteins up or the sauces. I could go on and on there. Long story short, this looks like the work of someone who doesn’t know what they’re doing or is completely checked out. Someone who delegates and walks away. They probably had one line loading into a hot box or onto a plate tree. They showed a plating line of temp labor one plate and rolled out.
