I use this technique for vacuum sealing fish with a paper towel. I dry them off first but there is always liquid that escapes.

Just got through sealing mahi, wahoo, and snapper from this weekend.
I set my filets in colander's over a pans in the frig overnight. They drain and dry out good that way. Then I vacuum seal them. Never had a problem with juice or not sealing properly.
