White bait and threadfin (green backs) are very similar looking but are very different. Threads are oily and they scale easily. They also die very fast. White bait are durable and get bigger and just work way better.
Top is a threadfin, middle is a white bait, bottom is a sardine.
White bait and pogeys are different. If I am not mistaken, Pogeys are actual menhaden

Can you tell them apart easily when cast-netting or is it something that comes with experience?

I am learning. Threads are usually in huge schools. The white bait dont seem to get in as big as groups. Also, the threads seem to stay closer to the surface while the white bait seem to stay a little deeper
Bridges are the best place to catch White bait but I can also catch them on the grass flats. I chum them up and wait for them to group up before I start throwing the net
I have places in the Tampa bay area that I can almost always catch white bait. I have been fishing more down near my house in Sarasota/Siesta Key lately. I am still learning that area and just have not found any consistent spots to catch them
Like you, I am a artificial guy most of my life. Just started on this live bait deal when I moved here. Still trying to figure things out
