The Wal-Mart on Hwy 98 west in Hattiesburg has two security guards posted at the meat section at all times.

Why? Why give Walmart the chance to re-shelf meat that has the possibly of being tampered with?
Besides, Walmart will carefully document the disposal of the meat. They will likely photo the labels with the officers present and toss it into the dumpster while on camera. Their reputation is far more important than a miniscule gain here.
