In addition to running power to my shed, i want to run a line from my house to under a tree then another 100' to another location. Total run from main breaker box to final location is 240'.

This line would have 2ea 15a outlets on it.

Wire size calculators say i need 8/2 direct burial wire. But when i look at outlets, even more robust ones, the are only able to accommodate up to 10AWG.

So how would i run a wire to these locations? is 8/2 too big? Am i over thinking this?

Yes. You can’t put 2x 15a receptacles on a 30a branch without a sub panel.

I'm trying to figure out the wire size as well as what receptacles to use. One will be for decorative lights under a tree, the last outlet would be for lights and to plug a pitching machine in which would draw some amps.

Putting a sub panel out there makes it a feeder and allows for a bigger drop of 5 vs 3% but I think these are all just recommendations. I’m sure your local jurisdiction isn’t more strict.
If it were me, I’d just step a a normal run up one size and call it good around a 7% drop so run 10awg right from panel with 20a breaker and receptacles. I’m not 100% sure here but that’s what I’d do.
