Google should have all of your answers. But it's mostly winning cups of various ccs and trying to get 1star or better (3star being the best) and also beating some of the staff time trials.

Yeah, I had to go all the way back to page 250-something to get past the COD threads...
But the wife did get this game for Christmas so it actually was a legit question...

IMO, what I used to get 3-stars on every cup was: Dry Bones with the Magikruiser motorcycle.
You unlock Dry Bones by winning the 100cc leaf cup and unlock the Magikruiser by just playing Time trials on 8 different courses.
Baby Daisy is also good with the Magikruiser.
