Need help with baby backs

I got a few racks for fathers day and I have a Chargriller grill. Big enough to offset indirect heat.

I have apple sauce in a spray bottle
Holy gospel rub
Holy Voodoo rub
Hickory chips

How should I cook these? Fill the entire chimney with charcoal? Offset? Need help please.

Spread out a chimney of charcoal evenly on one side, top with chips then get another 1/4 full chimney going and dump it at one end of the coals and add a few more chips. It should burn slowly for a few hours at a lower temp.

So half with coals or 1/3? Spread evenly.

Also, what’s my timetable for cooking wrapping glazing etc at 200-275

250, 4 hours, unwrapped, bend test around 3.30. I always check IT temp around 3 hours just in case it’s closer to 195 than anticipated.

1 whole chimney unlit spread out then light 1/4 to 1/3 a chimney and add to one end. It should take about 4 hours give or take 30 minutes depending on the temp. Smoke uncovered for at least 2 hours, wrap and another 30-60 minutes then open up and glaze. BB's are easy and cook faster than spares, just use a meat probe to check tenderness. I usually don't have to wrap BB's.

No babybacks cook a lot quicker than St. Louis style and I try and keep on top of it as sometimes they get to temp quicker than anticipated. Sometimes I don’t get a decent bend test until 205 but that is the litmus test.

I spot check IT in case they are cooking quicker than anticipated. Don’t hit the bone when testing IT.

Don't do 3-2-1. They'll be overcooked.
