Good flexing blade (slim blade) steak knives?

Like them for steak, but they are good for thin slices of cheese and tomato.

Are you telling us to use thin steak knives for cheese & tomatos or are you looking for recommendations on steak knives?

Just bought 6 of these to use as everyday small kitchen knives. They will work for your stated application but Victorinox also makes a straight edge steak knife for $13. They come sharp and are easy to sharpen. Swiss made. Can't go wrong unless you want to step up to premium German or Jap steel.
