I've made tamales a few times and it's a LOT of tedious work. A foodie friend altered his recipe to make tamales as a casserole and it was excellent - exact same taste with 10% of the work.

I found the stuff I’d asked Rat about.

I like projects like this, sausage, dry aging, etc. The kind of tamale you’re talking about is good. I’ve had them like that. But steaming them in the husk with a big ole pot is magic. The texture is really important. That starts with having the right stuff.

This lady is the real deal. I’ve been on a mission from Got over tamales for a while now. I’ve created, what Napoleon Hill calls, my mastermind alliance of tamale lore, legend, and love.

Love is the key ingredient in a tamale. The person who made it loves you. You’re not getting a quality tamale just anywhere. Without love, you have a chalky, dry, tasteless sponge that nothing can wash away.
