Frying a 3 pound turkey breast

Back in the day we would fry a whole bird outside, but this year the crew for Thanksgiving is smaller and we are just going to fry a 3 lb turkey breast.
I’m looking at the size of this thing and know it’ll fit on my stove in a pot like when I fry chicken. Anyone ever just tried a breast and have any recommendations on what to do or not to do?

Don’t have time or mechanism to smoke. Think I’ll just cut it in half and fry 1.5 pounds then.
