Fall is upon us, and that's about my favorite cooking time, as it's a lot more comfortable to sit outside with the smoker all night working on some good BBQ, Brisket, or just a good old Brunswick Stew. I've been making BBQ for about 20 years now, and I've altered rubs over the years to the point where I use a lot less rub now. Normally it just consists of seasoned salt, cracked black pepper, a little brown sugar, and a bit of chili powder now. I normally buy a 10#-12# butt and cook it at 225 for 12-14 hours using mesquite wood(my favorite), but sometimes just use hickory/oak since I have a lot of that. We have several HUGE pecan trees on our property, and when limbs fall I'll use them as well.

Upon further investigation of this Food & Drink board, I now get your sarcasm There's a ton of good info here, wish I'd have discovered it earlier, but better late than never !
