Ill assume at least a 10lb brisket. Start on ultra smoke setting, just turn down to lowest it will eventually say ultra smoke on screen. Forget about it for about 7-8 hours by that time you should have reached an internal of 150-160 or basically the stall.
Wrap in butcher paper if that is your preference crank up to 225 and cook until 202-202 or you have the correct feel this could happen before the temps above.
Put in a cooler cover with towels. I do 2-3 hours.
Burp the cooler every 30 min or so. Remove slice and enjoy
I have done 5 on my RecTec and they have all been outstanding using this method.

Great tip, makes a big difference. Try and find lumberjack 100% Hickory if you can.
